Researching Palm Oil Crystallization in Margarine

18/04/2011 (Food Product Design) - Fat crystallization is an important property in many food products, such as margarine-style spreads. To further delve into the science behind fat crystallization, Malaysian scientists examined the mechanism related to crystallization and emulsification of palm oil–based margarine fats. The researchers also looked at the main triacylglycerol (TAG) responsible for primary crystal formation and the best level of palm oil stearin that gives the required microstructure properties and body to finished products such as margarine, shortening and butter.

Indonesia Drags Heels On Deforestation Ban

18/04/2011 (Carbon Positive) - More than three months after a landmark moratorium on deforestation in Indonesia was due to take effect, the initiative is not in place as Jakarta battles to resolve the details of the forest clearing ban. Last year, Norway offered Indonesia $1 billion under a deal that would see Jakarta place a two-year moratorium on forest clearing. The deal is at the frontline of global efforts to establish a REDD+ mechanism to halt deforestation in developing countries and is being watched closely around the world.
